Ice Cream v. Gelato
Many customers ask, what's the difference between Ice Cream and Gelato? Here in the US, by law, gelato must contain less than 18% butter fat. Typically this is achieved by combining milk, instead of cream, with sugar and a variety of natural flavors.
Ice Cream, on the other hand, which must contain more than 18% fat, is made with cream or buttermilk, which is combined with eggs, sugar, natural flavorings, and milk.
Sorbet
Our sorbet recipes are quite simple - we combine the freshest natural fruits with sugar and water. Not to be confused with sherbert (which uses milk and water), sorbets tend to highlight the natural flavors of fruit.
One of our best selling frozen treats is our Sweet Republik Cranberry Orange Sorbet. Its perfect year-around and is great when splashed with a teaspoon of Grand Marnier liquor. Sorbets typically contain water and sugar, and if properly prepared, are designed to enhance the natural favors of seasonal fruits.
Smooth and Creamy
Many customers also ask why our products taste so smooth and creamy. One reason is that we don't churn in alot of air during the freezing process, a term known in the industry as overrun. Typically, our recipes call for 3 quarts of base into the batch freezer, and 4 quarts out. This results in a smoother, creamier taste.
