Sweet Republik also offers roasted Kakaw Nibs from the Belize Chocolate Company. The nib, or "meat", results from roasting the cacao beans.

As the bean is roasted, it expands and cracks. The shell is removed by a process called winnowing.

Nibs tend to be a bit more bitter in taste, but complement ice creams nicely, and can be added as a replacement for nuts in any cookie or brownie recipe.

Nibs are sold in packages, and can be custom ordered online.
