Chocolate

Whether we are using dark chocolate, nibs, or cocoa powder in our recipes, our first choice is always Kakaw, from the Belize Chocolate Company. From bean-to-bar, Kakaw's 70% Dark is arguably the world's best organic, micro-batched, chocolate we have ever tasted.

Made on the small island of Ambergris Caye, just south of San Pedro, The Belize Chocolate Comapany individually selects harvested beans from local family farmers in Punta Gorda, some of whom are descendants of the ancient Maya civilization.

Thankfully, Belize lacks commercialized industrial plantations. Due to the large number of small family farmers, various tree types, local climate, and diverse terrain, each batch of chocolate tastes unique.

Kakaw has no lecithin or vanilla added, so with each batch, you can taste the subtle flavor notes in every bite. Keep in mind these aren't added ingredients, but naturally occurring flavors in the cacoa beans which result from the drying, fermentation, and roasting processes.
